Blackened Flounder over Garden Greens

as seen on episode “Walking Fish CSF“, season 2
For each serving you need:
- 6 oz. flounder filet
- blackening seasoning
- mixed salad greens
- 3 oz. fresh strawberries, sliced
- 1 oz. toasted almonds or chopped pecans
- 1 oz. goat cheese
- citrus cilantro vinaigrette
Heat a well-seasoned cast iron skillet until very hot. While skillet heats, liberally season flounder filet on both sides with blackening seasoning. Place flounder in hot skillet and cook for approximately three minutes per side, depending on thickness. While the flounder cooks, toss mixed greens with vinaigrette, sliced strawberries, toasted nuts and goat cheese. Serve flounder over salad.
