Brandy Truffles

as seen on episode “Carolina Distillery“, season 2


  • 1 cup heavy cream
  • 3 Tbsp light corn syrup
  • 1 Tbsp unsalted butter
  • 1 lb dark chocolate (high quality is best)
  • 1 Tbsp apple brandy
  • 1/2 lb unsweetened cocoa or confectioners sugar (for dusting finished truffles)

Combine chocolate and butter in a bowl. In a saucepan combine heavy cream and corn syrup & heat over medium high heat until cream starts to simmer. Pour heated cream over chocolate and butter & stir until it has a creamy texture. Add apple brandy & stir to combine.  Cover bowl and place in refrigerator for at least 1 hour or overnight to set up. Once mixture is set, scoop out and roll into balls, by hand to desired size. Dust with cocoa or confectioners sugar. (or toasted coconut or toasted nut of choice)
