Chilled Soba Noodle Salad with Cashew Slaw and Chili Spiked Cucumber

Serves 6-8

Ingredients:

  • 2 pounds Apple Brandy Farms Denver cut Steak

For the marinade:

  • 4 oz hoisin sauce
  • 5 oz pineapple juice
  • 1 tsp chopped garlic
  • 1 Tbsp minced ginger
  • ¼ c sliced scallions
  • 2 oz soy sauce
  • 2 oz sesame oil

For the noodle salad:

  • 12 oz dry buckwheat soba noodles
  • 2 Tbsp sesame oil
  • 3 Tbsp soy sauce
  • 4 Tbsp sweet thai chili sauce
  • ½ carrot, grated
  • ½ zucchini, grated
  • ¼ c sliced scallions
  • Salt and pepper to taste

For the cashew slaw:

  • 1 small – medium head Napa Cabbage, outer leaves removed and finely shredded
  • 1 c toasted cashews
  • ½ medium red onion, thinly sliced
  • ½ c rice wine vinegar
  • ½ c canola or vegetable oil
  • 1 Tbsp minced ginger
  • 1 Tbsp honey
  • Salt and pepper

For the cucumber:

  • 2 seedless cucumbers
  • 1 tsp sriracha hot sauce
  • ½ tsp sesame seeds

Method:
Cut steak into 6-8 oz portions, trimming excess fat.
Combine hoisin, pineapple juice, garlic, ginger, scallions, soy sauce, and sesame oil. Mix well. Pour over steaks in non-reactive container and marinate 6-12 hours.

Cook noodles in salted boiling water 2-3 minutes, until tender. Drain and rinse with cold water. Toss with half of the sesame oil. Combine remaining sesame oil, soy sauce, thai chili sauce, grated carrot and zucchini and scallions with noodles. Toss thoroughly and lightly season with salt and pepper.

Combine cabbage, red onion and cashews in large bowl. In a blender combine rice wine vinegar, canola oil, honey, ginger and a pinch of salt and pepper and mix well. Reserve a small amount of vinaigrette for later use and toss the rest with the cabbage mixture.
Shred or dice cucumbers, combine with sriracha, sesame seeds, and the remaining slaw vinaigrette.

Prepare a grill for direct grilling. Grill steak 4-6 minutes per side, or until a thermometer inserted into the thickest part of the steak registers 140 degrees. Let steak rest at least 10 minutes before slicing thinly.
Plate noodles on top of slaw, then place slices of beef on noodles. Garnish with cucumbers.
