Wheatberry Salad
…with Apple Dijon Vinaigrette

Wheatberry Salad
- 2 cups dried wheatberries, washed & soaked in water, drained well
- 1 cup Granny Smith apple, diced
- 3/4 cup dried cranberries
- 1/2 cup red onion, chopped
- 1 cup feta cheese
Cook soaked & drained wheatberries in UNSALTED water for one hour (berries do not get soft, don’t overcook) Drain & cool. Add remaining ingredients & dress with apple dijon vinaigrette (as desired)
Apple Dijon Vinaigrette
- 3/4 cup apple cider vinegar
- 1 Tbsp dijon mustard
- 1 tsp Italian seasoning
- pinch salt & pepper to taste
- 2 Tbsp honey
- 1/2 cup apple cider or apple juice
- 1 Tbsp apple brandy
- 12 oz soybean or canola oil
Place all ingredients except oil into blender & blend. While motor is running, drizzle in oil until emulsified.
