Cajun Cornmeal Crusted Fried Oysters…
…with 42nd ST Remoulade

as seen on episode “Carolina Mariculture“, season 2
Remoulade Sauce
- 1 cup of mayonnaise
- 1 teaspoon of white grain mustard
- juice of one lemon
- 1 1/2 teaspoons dry tarragon leaves
- a pinch of chopped parsley
- 1/2 teaspoon kosher salt
- 1 teaspoon minced garlic
- 1 tablespoon capers
- 1/4 cup sherry
- 1 teaspoon cayenne pepper
Combine all ingredients. Mix well.
Oysters
- 2 cups Cornmeal
- 2 Tbsp Cajun Seasoning
- All purpose Flour
- shucked Oysters
- Vegetable Oil for frying
Rinse oysters and soak in cold water. Blend together cornmeal, Cajun seasoning to taste and flour. Dredge oysters in in cornmeal mixture and deep fry fry until golden brown. Serve with Remoulade Sauce.
