Oysters Bienville Recipe on Flavor, NC

  • 1/3 cup of chopped bacon (3 or 4 slices)
  • 1/2 cup shallots
  • 1/4 cup red bell pepper
  • cayenne pepper and salt to taste
  • 2 tablespoons of butter
  • a pinch of minced garlic
  • 1 tablespoon flour
  • 1/2 cup of half and half
  • 1/3 cup of sherry
  • 1/2 cup chopped mushrooms
  • 1/3 cup chopped shrimp
  • 3 tablespoons of parmesan cheese
  • 1 bunch of green onion
  • sprinkle of chopped parsley
  • 1 egg yolk
  • 1 dozen oysters on the half shell

Sautee bacon until it begins to brown. Add shallots, red pepper, cayenne pepper and salt to pan. Sautee until shallots begin to turn translucent. Add butter and garlic and saute until butter melts. Add flour and continue to saute for two minutes. Stir constantly. Add half and half and sherry. Cook until it begins to thicken. Add shrimp and mushrooms and reduce heat. Cook until shrimp begins to turn pink. Remove from heat and stir in parmesan, green onion and parsley. Add egg yolk and mix well. Allow to cool and spoon on to half shell oyster and bake at 400 degrees until it begins to brown. Tops approximately 12 oysters.
