Pimiento Cheese Oysters

Ingredients
- 4 cups of shredded cheddar cheese
- 2 cups of shredded pepper jack cheese
- 3/4 cups of pimientos (diced)
- 1 jalapeno (diced)
- 1 1/2 teaspoons black pepper
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 1/2 teaspoon cayenne pepper
- 2 1/2 tablespoons of bread crumbs
- 1/2 cup of mayonnaise
- 1 1/2 teaspoons of Dijon mustard
- 2 dozen oysters on the half shell
Combine all dry ingredients and mix. Add the mayonnaise and Dijon mustard and mix thoroughly. Spoon the ingredients on to half shell oysters. Bake at 400 degrees until cheese starts to brown (approximately 20 minutes). Tops approximately two dozen oysters.
