Grilled Soft Shell Crabs

Serves 4
Ingredients:
- 4-8 soft shell crabs washed and cleaned
- 2 limes
- ½ cup olive oil
- 1tablespoon Thyme
- ½ teaspoon salt
- ¼ pepper
- Zest of 1 lime
- Grilled corn relish (recipe follows)
Directions:
Zest 1 Lime into a mixing bowl. Add juice of 2 limes, thyme, pepper and salt. Slowly whisk in olive oil.
Dredge the soft-shell crabs in the marinade, remove and shake off excess liquid. Grill crabs, top side first on a med-high Grill for 3-5 minutes. Turn and continue grilling until meat turns white and there is no translucent color. Plate and top with Grilled Corn Relish or fresh salsa
Optional Serving Tip: Great over a Mixed Green Salad with a favorite Vinaigrette
Grilled Corn Relish
Ingredients:
- 6 ears of sweet, white corn
- 1 red pepper, chopped
- ½ red onion, chopped
- ½ cup red wine vinegar
- ¼ cup olive oil
- ½ cup sugar
- ½ tablespoon mustard seed
- ½ tablespoon celery seed
- 1 tablespoon mixed salt and pepper
- 3 tablespoons fresh lime juice
Directions:
Clean the corn and steam for twelve minutes, then char on a grill. Cool then cut kernels from the cob. Combine corn kernels, onion and pepper in a bowl and set aside. Combine vinegar, lime juice, olive oil and spaces in a saucepan and bring the mixture to a boil. Add sugar and stir until the sugar dissolves. Cool slightly, pour over the corn mixture and toss to combine.
