Molten Double Chocolate Cake…
…with Raspberry Coulis & Sweet Cream.

Cake
Ingredients:
- 1 pound chocolate
- 1 pound butter
- 3/4 cup blackberries
- 1 tsp. chipotle in adobo
- 6 whole eggs
- 10 egg yolks
- ½ pound sugar
Directions:
Melt butter and chocolate and cool slightly. Add a little of the chocolate and butter mixture to the eggs to temper them. Whisk in eggs, then remaining ingredients. Pour into individual ramekans or baking dishes. Bake at 375 for 8-10 minutes.
Raspberry Coulis
Ingredients:
- 1/2 cup sugar
- 3 Tbsp. water
- 1 pound fresh blackberries
- 1 Tbsp. Chambord
Directions:
Bring sugar & water to a boil – combine with raspberries & Chambord in a blender and puree. Strain the puree into a bowl and serve.
