Yellow Tomato Puttanesca Pan Sauce

  • 1/2 cup Extra Virgin Olive Oil
  • 2 anchovies
  • 1 shallot
  • 2 cloves garlic
  • pinch crushed red pepper
  • 1 Tbsp. capers
  • 2 Tbsp. olives
  • 2 cups tomatoes
  • 1 Tbsp. parsley
  • 1 pound pasta


Heat the olive oil in a sauté pan. Add the anchovies and garlic and cook for a minute or two. Add the shallot, crushed red pepper, olives and capers and continue cooling for 3-4 minutes. Add the tomatoes to the pan, and continue to sauté for a minute or so. Then top with the parsley, season with salt and pepper and sauté for seven or eight minutes until the tomatoes are soft. This sauce is terrific served over thinly pounded, pan seared chicken breast.
