Inlet Summer Shrimp Salad

Ingredients:

  • 4 cups mixed salad greens
  • 1 cup small shrimp, peeled and deveined
  • 1 roasted red pepper, diced
  • 2 Tbsp butter
  • ½ cup chopped walnuts
  • ½ cup slivered almonds
  • ½ a thinly sliced red onion
  • 1 cup mandarin oranges
  • sliced field grown tomatoes
  • 1 Tbsp sesame seeds
  • 2 cups sesame-ginger vinaigrette dressing
  • 1 Tbsp Old Bay seasoning
  • salt and pepper to taste

Season shrimp with Old Bay and sauté in butter until cooked through. Toss together the salad greens, red pepper, nuts, onion, orange slices and dressing to taste. Plate the salad, top with sautéed shrimp, arrange tomato slices on the plate and sprinkle with sesame seeds.
