Blackberry BBQ Chicken

  • 2 chicken breasts, flattened
  • 1 Tbsp Olive oil
  • ½ Cup fresh blackberries
  • 2 Tbsp brown sugar
  • 2 Tbsp Cider Vinegar
  • ½ Cup chick stock or broth
  • salt and pepper to taste

Season the chicken breasts with salt and pepper. Heat sauté pan, add the olive oil to coat the pan, then sear the chicken breasts on medium heat for three minutes. Turn the chicken breasts over and add the blackberries to the skillet. Continue cooking the chicken for another three minutes, making sure the berries don’t burn. Add the brown sugar and vinegar and stir to dissolve the sugar. Simmer the mixture for about 30 seconds. Add the chicken stock or broth and simmer on medium until the chicken reaches an internal temperature of 165 degrees and the sauce has thickened and begun to form a glaze on the chicken. After plating, drizzle the chicken with the pan sauce.
