Caviar Bacon Blini

Ingredients:
- ¾ Cup All purpose cornmeal
- ¾ Cup self-rising flour
- 1tsp baking powder
- 2 tsp sugar
- 2 tsp creole seasoning
- 1 pinch salt
- ½ Cup cut corn
- 1 Egg
- ¼ Cup half and half
Mix the wet ingredients together, then in a separate bowl, mix the dry ingredients together. Fold the wet and dry ingredients together to create a pancake consistency. Drop the batter in silver dollar size pancakes on a hot griddle. When bubbles form around the edges, flip the pancakes and continue to cook until done. Garnish with crème fraiche, crispy bacon, micro greens, and a dollop of caviar.
