Pan-Roasted Sturgeon Filet

Ingredients:

  • 6 oz sturgeon filets with bloodline removed
  • 2 cups milk
  • 1 lemon, zested and juiced
  • 1 lime, zested and juiced
  • 1 orange, zested and juiced
  • Olive oil
  • Salt and Pepper to taste

Mix liquids together and marinate the fish for 24 hours. When ready to cook, pat the fish filets dry. Bring olive oil in an oven proof frying pan to “smoke point” or until the oil shimmers. Season the fish with salt and pepper, and sear both sides of each filet until golden brown. Place the pan with fish in the oven for four to six minutes or until the fish is medium well. Alternatively, the fish filets can be grilled. serve with smashed potatoes, vegetable of choice and a lemon Beurre Blanc sauce.
