Stir-Fried Green Beans

  • 2 lbs fresh Green Beans
  • ½ Cup of Sweet Onions Cut Julienne
  • 4 Tsp Olive Oil
  • Salt
  • Pepper
  • ½ Cup Chicken Stock

Blanch the greens in boiling water, until crisp tender. Cool the beans in an ice bath to stop the cooking process. Heat a large skillet or sauté pan, and add the oil. Saute the sliced onions in the hot oil until caramelized, then add the green beans, stirring frequently. Season the green beans and onions with salt and pepper to taste. Add the chicken stock a little at a time as needed and continuing cooking, stirring frequently for about 5 minutes.

    This actually worked out well! Although I needed to saute the green beans a little longer than 5 minutes. Not sure if I had done something wrong. But the dish came out really tasty. Trying it again!
