Sausage Enchilada Casserole

  • 1 lb Sausage
  • 1 lb ground chuck
  • ½ onion, chopped
  • 2, 8 oz cans tomato sauce
  • 1, 11 oz can Mexicorn, drained
  • 1, 10 oz can Enchilada sauce
  • ½ tsp chili powder
  • ½ tsp oregano
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1, 6 ½ oz package corn tortillas
  • 2 cups shredded cheddar cheese

Cook the sausage, ground beef and onion in a large skillet until browned, then crumble and drain it. Stir in the tomato sauce and next six ingredients and bring it to a boil. Reduce the heat to medium and cook for five minutes, stirring occasionally. Place half of the tortillas in the bottom of a greased 13x9x2 baking dish. Spoon half the meat mixture over the tortillas and sprinkle it with one cup of the cheese. Repeat the layers with the remaining tortillas and meat mixture. Bake at 375 degrees for ten minutes. Sprinkle the casserole with the remaining one cup of cheese and bake for an additional five minutes.
