Winter Wonderland Cupcakes

Winter Wonderland Cupcakes | Flavor, NC

Ingredients:

  • Simple Syrup*
  • 2 cups sugar
  • 6 to 8 fresh rosemary sprigs
  • Assorted fruit – like grapes, raspberries, cranberries and blackberries
  • Frosted cupcakes

Have a rimmed baking sheet handy. Place your simple syrup in a bowl. Place the sugar in a separate bowl. Dip the rosemary into the simple syrup and toss in the sugar to coat. Place on the baking sheet to dry. Repeat with remaining rosemary and fruit, using whatever combination of fruit you like, planning for about 1 to 3 pieces of fruit for each cupcake.

As you sugar your fruit, the simple syrup will begin to clump the sugar together and look like snow, which you’ll use to garnish the display. Arrange the cupcakes on your pedestal cake stand. To create some height for interest, raise the center cupcake with a small glass jar or bowl. Spoon the snow decoratively around the cupcakes, making mounds or “drifts” around the center cupcake. Cut the rosemary to desired length. Stand several rosemary sprigs upright in the snow around the cupcakes and use smaller pieces as “shrubs.” Sprinkle a little sugar snow over the cupcakes and garnish each cupcake with some sugared fruit.

*To make a simple syrup, combine 1 cup of water and 1 cup of sugar in a small saucepan over medium-low heat. Cook, stirring occasionally, until the sugar is dissolved. Cool before using.
