Apple Butter Ice Cream Parfait

as seen on episode “Apples”, season 5
Ingredients:
- 2 quarts heavy cream
- 2 cups sugar
- 1 vanilla bean, split
- 12 egg yolks
- 1 jar of apple butter
Bring cream, sugar, vanilla bean halves and apple butter to a simmer in a heavy bottom sauce pan until sugar is dissolved. Add egg yolks and cook on low heat stirring frequently with a wooden spoon until the mixture coats the back of the spoon. Chill in an ice bath, then freeze in an ice cream maker.
Serve the ice cream on its own, or to make a parfait saute minced apples in butter and season with browned sugar. Make parfait by layering the apples, ice cream and whipped cream topping of choice.
