Apple Chips

as seen on episode “Apples”, season 5
Ingredients:
- 1 apple cored
- 2 cups water
- 1 cups sugar
- 1 lemon
Slice the cored apple in paper thin circles using a Japanese mandolin. Bring sugar, water and lemon juice to a simmer. Lightly simmer the apple slices for 20 minutes. Dry the apple slices on a paper towel and cook on a silpat baking mat at 160 degrees for 2 hours or until desired dehydration has occurred.
