Pecan Apple Fritters

as seen on episode “Pecans”, season 5

Ingredients:

  • 1 cup water
  • 5 Tbsp butter
  • 1 cup All purpose flour
  • 4 eggs
  • 1 cup chopped apples
  • ¼ cup chopped pecans
  • 1 tsp cinnamon
  • 2 Tbsp brown sugar
  • 1 Tbsp Calvados (apple brandy)
  • 1/2 tsp lemon juice
  • 1 tsp salt

Bring water and butter to a boil and the butter is melted. Add all the flour at one time and stir with a wooden spoon until the batter holds together on spoon and comes cleanly away from side of pan. Set aside to cool.
Mix apples, pecans, cinnamon, brown sugar, calvados, lemon juice, and salt. Let sit.
Let batter cool to just warm. Put in mixer with beater and add eggs one at a time until incorporated. Fold in the apple mixture and fry in 360 F oil until golden brown. Serve with Caramel Sauce and Cognac Chantilly Cream (recipes below).

For the Caramel Sauce

Ingredients:

  • 1 cup Sugar
  • ¼ cup water
  • 2 tsp butter

Combine water and sugar in pan and bring to boil; boil until water is gone and caramel is rich brown color (lighter is sweeter); cool pan in water and add butter; add water to desired consistency.

For the Cognac Chantilly Cream

Ingredients:

  • 1 cup heavy whipping cream
  • 6 drops brandy or cognac
  • 2 tsp sugar

Add sugar to cream and dissolve, add cognac, whip.
