Hot Pepper Pickling Liquid

  • 1 cup of hot pepper vinegar (recipe below)
  • ¾ cup water
  • ½ cup sugar
  • ¼ cup salt
  • 2 sprigs fresh thyme
  • 2 Tbsp toasted black peppercorns
  • 1 Tbsp toasted fennel seeds

Combine all the ingredients in a sauce pan and bring it to a simmer. While still hot, pour the pickling liquid over any vegetable you wish to pickle.
