Hot Pepper Pickling Liquid

as seen on episode “Peppers”, season 5
Ingredients:
- 1 cup of hot pepper vinegar (recipe below)
- ¾ cup water
- ½ cup sugar
- ¼ cup salt
- 2 sprigs fresh thyme
- 2 Tbsp toasted black peppercorns
- 1 Tbsp toasted fennel seeds
Combine all the ingredients in a sauce pan and bring it to a simmer. While still hot, pour the pickling liquid over any vegetable you wish to pickle.
