Carolina Bison Chili

Flavor, NC | Bison Chili

Yield 5 quarts

For the chili:

  • 5 lbs. ground Carolina Bison (cooked with spices)
  • ½ cup paprika
  • 1/4 cup smoked paprika
  • 1/4 cup onion powder
  • 1/4 cup garlic powder
  • ¼ cup black pepper
  • ¼ cup salt
  • Lemon juice-to taste
  • 8 cups cooked white beans
  • 2 cups veal demi glace or reduced beef broth
  • 4 cups sofrito sauce (recipe below)
  • Salt and black pepper-to taste

Combine Bison and spices and simmer for 30 minutes or until thickens. Season with lemon juice before adding white beans, demi glaze or reduced beef broth, sofrito (recipe below) that has been pureed and salt and pepper.

For the sofrito:

  • 1 tsp olive oil
  • 1 tbsp. chopped shallots
  • 1 tbsp. chopped garlic
  • 2 tbsp. smoked paprika
  • 6 cups san Marzano plum tomatoes
  • 2 cups roasted red peppers

Sauté shallots and garlic in olive until translucent. Add paprika tomatoes and roasted red peppers and simmer for 25 minutes. Puree to a smooth consistency.
