NC Fish Balls with Cilantro Green Onions and Tomato Sauce | Flavor, NC


  • 1 lb. white fish filets (flounder, grouper)
  • 1 cup onion or scallions, diced
  • ½ cup cilantro
  • ½ cup parsley
  • 1 clove garlic, minced
  • 1 cup all-purpose flour
  • Salt and Pepper to taste
  • 2 TBSP. Olive oil


Cook onion in olive oil with salt until tender and let cool.
Put fish, cilantro and parsley into a grinder, which is best or you can use a food processor.
In a bowl, combine the fish/herb mixture, garlic and cooked onions. Before working with the mixture, coat hands with water. Then form into balls or small patties and coat in the flour.
Heat a small pan with a few tablespoons of olive oil and cook fish balls on each side until lightly browned. Then transfer to tomato sauce and continue to cook for 15 minutes.

For the Tomato Sauce


  • 4 cups ripe cherry or grape tomatoes, chopped
  • ½ TBSP. sweet paprika
  • ½ cup parsley
  • ½ cup cilantro
  • 1 clove garlic, minced
  • 1 cup onion, diced
  • 4 TBSP. olive oil
  • Salt and pepper to taste


In a large skillet, heat olive oil on medium. Add the onion, garlic, herbs, paprika, tomatoes, salt and pepper. Simmer until thickened and the tomatoes begin to break down. Then add the fish balls.
