Cheese Platter | Flavor, NC

1 slice, Piemonte Farm Don Gabino Cheese

For the Carrot Marmalade


  • 3 carrots, peeled and pureed
  • ¼ cup of white balsamic vinegar
  • 2 cups of granulated sugar


Puree carrots in a blender. Add the vinegar and blend more. Transfer to a heavy bottomed pot. Add the sugar, bring to a boil, and then turn down to a simmer until the bubble is thick and syrupy. Skim off any foam that may collect on the surface.

For the Spicy Popcorn


  • ¼ cup popcorn
  • ¼ tsp. cayenne
  • ½ tsp. brown sugar
  • ¼ tsp salt
  • ¼ tsp. chili powder


Pop the popcorn and let cool. Blend in a food processor and add the spice mixture.

For the Spent Grain Cracker


  • 2 ½ cups all-purpose flour
  • ½ cup spent grain
  • 1 cup warm water
  • 1 teaspoon kosher salt


Rehydrate the dry spent grain in the cup of warm water. After the water becomes room temperature add the flour to the food processor. Blend everything together for 1 minute. Form the dough into a ball, wrap in plastic, and chill. After chilling, roll the crackers as thin as possible and bake in sheets at 350*F until crispy. Approx. 10 minutes. NOTE: before baking you can spray the sheets with water and sprinkle whatever dry spices and seeds you want to crust the crackers i.e. mustard seed, fennel seed, poppy seeds, sea salt, and coriander seed.
