Sorghum-Balsamic Sweet Potatoes

Sorghum-Balsamic Sweet Potatoes | Flavor, NC


  • 1 ½ lbs. sweet potatoes, diced 2×2
  • ½ cup sorghum
  • ½ cup olive oil mix
  • ¼ cup balsamic vinegar
  • 1/3 cup basil
  • 1/3 cup parsley
  • 1/3 cup cilantro
  • 1 Tbsp. each salt and pepper


Roast sweet potatoes at 350 degrees for 15 minutes with oil, salt and pepper.
While sweet potatoes are roasted, place sorghum, oil, balsamic and herbs in a blender. Puree until smooth. Place in a large mixing bowl. Once sweet potatoes are done, add to the mixing bowl. Mix with a long spoon, add back to the roasting pan and roast for 5 minutes more. Serve hot or cool and use in Flatbread or salad recipes.
