as seen on episode “Pork | Goldsboro, NC“, Season 8

Serves 10

  • 1 Whole boneless ham (about 10-12lbs)
  • ½ cup fresh orange juice
  • ½ cup pear nectar
  • ½ cup brown sugar
  • ½ cup maple syrup (or molasses)

Preheat oven to 375°F

Place ham cut side down in deep baking pan
Crosshatch the ham by scoring the outside in a diamond pattern (cuts should be about ¼” to ½” deep)

Mix pear nectar and OJ together and pour over ham
Roast for 30 minutes, basting every 10 minutes with juice.

In a separate bowl, mix syrup and brown sugar.

After the first 30 minutes of cooking, pour the syrup/brown sugar mixture over the top of the ham and spread evenly.
Bake until sugar caramelizes and starts to form a crust, about an hour.

Let rest before slicing.
