Pine Knot Farms is a certified organic farm located twelve miles north of Hillsborough. The farm is owned by Stanley Hughes and his wife Linda Leach Hughes. Stanley is the third generation of his family to farm the land, making it a designated North Carolina Century farm. The Hughes sell their produce direct to the public at an on-farm stand, and at the Carrboro Farmers’ Market. Their produce can also be found at restaurants throughout the triangle.

Sprout Café at the NC Museum of Life and Science in Durham opened in March 2013 with an emphasis on serving locally grown produce in a casual atmosphere. The café is open Monday through Saturday from 10 a.m. to 5 p.m. and Sundays from Noon to 5 p.m.

Heart Healthy Tips
Collards are:
- Highly nutritious and low in calories
- Good source of Vitamins A, C and K, calcium and iron
- Contain 3 grams of fiber per ½ cup serving
- Try using half the recommended amount of fat when preparing in a recipe
NOTE: If you take Warfarin (Coumadin®), foods high in Vitamin K (such as leafy greens like collards) may affect the way your medication works. If you do eat Vitamin K-rich foods, eat the same amount each day and throughout the year. Do not eat a small amount one day and a large amount the next. If you have any questions or concerns about eating leafy greens, please talk to your doctor.
