Whatchamacallit In A Glass
This is a triple layer dessert consisting of Milk Chocolate Custard, Cocoa Nib Caramel and Peanut Butter Yogurt Cream.

Milk Chocolate Custard
Ingredients:
- 1 cup milk
- 1 cup cream
- 6 egg yolks
- ¼ cup sugar
- pinch of salt
- ¼ tsp gelatin
- 1 Tbsp water
- 2 ½ cups milk chocolate
Directions:
Sprinkle the gelatin over the water and set aside to bloom. Chop the chocolate and set aside. Combine the milk and cream in a saucepan and begin to warm on medium heat. Meanwhile, vigorously whisk the egg yolks with the sugar and salt.
When the milk is warm gently pour the cream and milk onto the egg yolks while stirring. Pour the mixture back into the sauce pan and stir gently, but constantly over medium heat. Cook the custard until it has thickened and coats a spoon. Remove the custard from the heat and add the gelatin stirring to dissolve. Pour the custard through a fine mesh sieve onto the milk chocolate. Whisk until smooth. Pour into desired dishes.
Cacao Nib Caramel
Ingredients:
- ½ cup sugar ½ Cup
- ¼ cup corn syrup ¼ Cup
- pinch of salt Pinch
- 1 cup cream 1 Cup
- Cacao Nibs ¼ Cup
Directions:
Place the salt, sugar, and corn syrup in a tall saucepan and place over medium heat stirring gently if needed to avoid scorching. While the sugar is melting and slowly caramelizing, warm the cream in either another saucepan, or in a microwave.
When the sugar has caramelized to a dark mahogany color slowly and gently stir in the cream, be careful as it may splatter. Allow the caramel to cool and then stir in the cacao nibs. Layer on top of Milk Chocolate Custard.
Peanut Butter Yogurt Cream
Ingredients:
- 2 Tbsp sorghum
- ½ cup peanut butter
- ½ cup yogurt
- ¼ cup roasted peanuts (chopped)
- ¼ cup crushed wafer cookies
Directions:
Stir the sorghum into the yogurt to help dissolve. Stir the peanut butter into the yogurt until smooth. Mix in the crushed wafers and the peanuts, mix until smooth. Layer on top of Cocoa Nib Caramel and serve.

Peanuts:
- Great as a snack, topping on salad or ingredient in main dishes
- Excellent source of Vitamin E and healthy unsaturated fats
- Can be challenging to control your portion size of peanuts. Try limiting to a handful.
- Make your own peanut butter or buy Natural Peanut Butter to avoid unhealthy fats and added sugars.
