Sweet Potato Cornbread Stuffing

Ingredients:
- 1.5 quarts trinity (green peppers, onion and celery)
- 2 Tablespoons sage
- 1 1/2 Tablespoons thyme
- 2 Tablespoons sausage seasoning
- 1/4 cup melted butter
- 3.5 quarts toasted sweet potato cornbread crumbs (full sheet tray of cornbread) –make from sweet potato cornbread recipe
- 1/2 cup chopped green onions
- 1 cup chopped parsley
- 2 cups chicken stock
- 4 eggs, beaten
Directions:
In a large sauté pan, cook the trinity, sage and sausage seasoning in the melted butter until the vegetables are soft-5 to 6 minutes. In a large bowl combine the cooked vegetables with the toasted bread crumbs. Add the chicken stock and eggs. Spray the bottom and sides of a 2 inch full hotel pan. Place the stuffing in the pan and bake in 375 degree oven for 25-30 minutes or until the stuffing is set and lightly browned.
