Caramelized Sweet Onion Ice Cream & Rum Raisin Sauce

Onion Ice Cream
Ingredients:
- 2 cups dark brown caramelized sweet onions (recipe below)
- 2 cups milk
- 2 cups heavy cream
- 8 egg yolks
- 9 ounces sugar
Directions:
- Add caramelized onions and milk to a blender and blend until silky smooth
- Heat onion milk, cream and sugar in a saucepan until a simmer and sugar is dissolved
- In a mixing bowl whisk egg yolks. Slowly add the hot cream mixture one ounce at a time while whisking the egg yolks. After 4 ounces have been incorporated, whisk the egg mixture into the hot cream mixture. Pour through a fine strainer and cool over an ice bath or in the refrigerator overnight.
- Churn the mixture in your ice cream maker according to the directions. Serve, topping with the rum raisin sauce (recipe below)
Caramelized Sweet Onions
Ingredients:
- 4 cups chopped raw onions
- 2 Tbsp cold butter
Directions:
- Combine 4 cups chopped raw onions with 2 Tbsp. cold butter.
- Place in a cold pan and cook on low for 45 minutes stirring frequently.
Rum Raisin Sauce
Ingredients:
- ½ cup dark brown sugar
- ½ cup light corn syrup
- 1 T unsalted butter
- ½ cup raisins (golden or dark)
- ¼ cup dark rum
Directions:
- Combine sugar and corn syrup in a small saucepan and stir over medium heat until sugar has melted.
- Remove from heat and whisk in butter, then add rum and raisins.
- Allow to cool to room temperature, and serve over finished ice cream.
