Sweet Onion Jam

Ingredients:
- 2 TBL unsalted butter
- 3 large sweet onions cut into ½ inch dice
- 1/2 cup sugar
- 1/2 cup dry red wine such as Cabernet Sauvignon
- 1/2 cup sherry vinegar
- ½ cup Amarena cherry syrup
Directions:
- Add butter and onions to a large sauté pan over medium heat and cook until soft and translucent, about 10-12 minutes
- Add sugar, wine, sherry vinegar, and cherry syrup
- Cook over low heat stirring frequently until reduced by half or until the liquid coats the back of a spoon.
- Remove from heat and let cool completely.
- Serve with cheese plates, biscuits, or grilled meats, especially beef (recommended, hanger steak).
